Crab and Cheese Casserole Recipe

This healthy casserole recipe is filled with crabmeat, vegetables and cheese. Perfect for a brunch, lunch or light dinner, this healthy recipe for crab and cheese casserole is easy and delicious.

Ingredients

    • 1 small onion, chopped
    • 3 small zucchini, unpeeled and sliced
    • 1 garlic clove, crushed
    • 2 large tomatoes, chopped
    • 1/2 lb lump crabmeat
    • 1/2 cup diced reduced-fat Swiss cheese
    • 1/2 cup fine Italian-style bread crumbs
    • Black pepper to taste
    • 1 tsp chopped fresh basil
    • 1 Tbsp trans fat free margarine

Preparation

    • Preheat oven to 375°.
    • Lightly coat a skillet with nonstick cooking spray and heat over medium heat until  hot. Add onion, zucchini and garlic. Sauté until onion is transparent, stirring frequently, about 4 minutes. Set aside.
    • In large bowl, mix tomatoes, crab, 1/4 cup of the cheese, 1/4 cup of the bread crumbs, pepper and basil. Add zucchini mixture and mix thoroughly but lightly. Transfer mixture into a 2-quart casserole dish. Sprinkle with remaining 1/4 cup of cheese and remaining 1/4 cup of bread crumbs. Dot with margarine. Bake, uncovered, for 30 to 40 minutes, or until crab is cooked and bread crumbs are browned and golden.
