Cantaloupe Campari Sorbet Recipe

Try this light recipe for fruity sorbet. It is a fat free, delicious alternative to ice cream

Ingredients

    • 1/2 cup water
    • 1/2 cup sugar
    • 3 cups diced cantaloupe
    • 1/2 cup orange juice
    • 2 tbsp Campari plus 2 tbsp to garnish
    • orange slices for garnish

Preparation

    • Bring water and sugar to a boil and stir until sugar dissolves. Let syrup cool. In a blender smoothly puree fruit with syrup, orange juice and 2 Tbs of the Campari. Pour puree into a 9" square metal pan. Cover and freeze until solid, at least four hours.
    • Let sorbet stand at room temperature until slightly softened, about 10 minutes. Then break into chunks and whirl in a food processor or beat with a mixer to make a smooth slush. Serve sorbet at once, or return to the freezer up to one hour. (It becomes very hard if frozen longer.) To serve, scoop sorbet into tall wineglasses and pour a little Campari around each scoop. Garnish with orange slices.
