Here's a side dish recipe that's bursting with flavor and healthy nutrients. Spiced up with garlic and red pepper, this kale recipe will add a kick to any dinner. Leafy greens never tasted so good.

Ingredients

    • 2 1/2 lb kale, tough stems and center ribs discarded and leaves cut into 1-inch-wide strips
    • 2 Tbsp olive oil
    • 1 medium red onion, halved lengthwise and sliced thin crosswise
    • 3 garlic cloves, minced
    • 1/2 tsp crushed red-pepper flakes
    • 2 Tbsp red wine vinegar, or to taste
    • 1/4 tsp salt

Preparation

    • In a large pot of boiling water, cook kale, uncovered, stirring occasionally, until just tender, about 10 minutes. Drain in a colander and set aside.
    • In a large skillet, heat oil over medium-high heat until hot. Add onion and sauté, stirring occasionally, until softened, 6 to 8 minutes. Add garlic and red-pepper flakes and sauté, stirring, for 1 minute. Reduce heat to medium and add kale. Cook, stirring occasionally, until heated through. Remove from heat and stir in vinegar and salt.
